father's day


I thought these were so cute - found them on red envelope - and I think I am going to steal the idea for father's day. steve is not much of a baseball fan, but thought they would be cute as footballs too. I will post some pics if I get them done :)

chicken enchiladas

my mom made this for dinner for us a few nights after i had drew...I don't know if it was the lack of sleep or all the excitement going on, but steve and i absolutely loved it and i love making it now bc it reminds me of that time...(you know, the time before drew learned to talk back to me!) :)

4 c. shredded chicken (i use 2 rotisserie chickens from the store - easy and tasty!)
1 32oz jar salsa verde
8 oz monetary jack cheese
1/2 c. cilantro
salt/pepper to taste
16 6" corn tortillas
1/2 med white onion
sour cream/guac to taste

400 degree oven

mix:
chicken, 3/4 of the salsa verde, cheese, cilantro & salt and pepper together.
Pour 1 c. of the salsa on the bottom of a casserole dish.
Layer w tortillas (might want to micro these for 45 sec. or so) layer with chicken mixture, I usually do about 3 layers of tortillas & chicken mixture or so (until i run out)
Drizzle 1 1/2 c of salsa & cheese on the top.
Cover w foil. 30 min in 400 degree oven.
Remove foil last 5 min. and sprinkle w/ onion and cilantro.

JELLO SHOTS





ha ha ha ha. . .
Hey everyone. I am so excited to get to share my favorite recipes with you all. I thought I would start with my very favorite... Jello Shots.

Ingredients:
2Cups ice cold vodka (flavor of your choice)
2Cups boiling water
1 large box Jello (flavor of your choice)

Directions:
boil 2 cups of water and add to Jell-O powder until dissolved. Add 2 Cups of vodka that has been in the freezer so it is ice cold. Stir it up good. Pour into a cake dish or something - I use a big Tupperware for easy storage and transport :). put in fridge for 2 hours to set.

Get Amer to spoon them into people's mouths and let the party begin.
